Countless elements make weddings memorable, but great food usually takes the cake. We recently sat down with two superstars at Windows Catering (catering.com): Anne Movaghari, senior event designer, and Gina Espinoza, executive pastry chef.
Dessert stations are popular with many couples since they showcase their unique tastes
What’s the process for working with your company—in other words, how do you map out the big day with a couple when it comes to food?
Anne Movaghari: At Windows, we believe in a collaborative approach that blends the couple’s vision with our expertise. We start with an in-depth consultation to understand their preferences regarding cuisine styles, dietary needs and any family traditions or cultural elements they’d like us to incorporate. We then create a custom menu tailored to their tastes and vision. From the first consultation, we assist with all aspects—from tastings to finalizing event logistics—to ensure their wedding day dining experience is seamless, elegant and unforgettable.
What are the three biggest catering trends for events?
Gina Espinoza: Interactive food stations. Couples love giving guests an experience beyond traditional dining, so interactive food stations are hits. They include sushi rolling, great ’smores, espresso martini bars, pasta-making and more.
We’re also seeing more requests from couples for sustainable and locally sourced ingredients to support local farmers while reducing environmental impact. Couples also want personalized culinary elements like signature cocktails, menus reflecting the couple’s backgrounds and mini dessert bars highlighting favorite flavors.
What trend do you love and why?
GE: We love the focus on personalization in catering. It allows us to create a meaningful dining experience reflecting the couple’s personality and love story, making their big day even more memorable for everyone involved.
What advice would you give a couple planning their big day?
AM: Don’t wait until the last minute to finalize your guest list. Catering details rely heavily on guest count, and an accurate list will help with planning and budgeting.
Choose a menu that you love, but also consider your guests. Various options will ensure there’s something for everyone to enjoy. Focus on enjoying the planning process. Your wedding celebrates your love; every step should feel as unique as the day.
Where should a couple never skimp?
GE: Couples should never skimp on service. A professional and attentive staff can elevate the dining experience and ensure every detail is cared for, allowing guests to relax and celebrate alongside them.
