Recipients of The Card (its name, natch) are at the discretion of the establishment, which has been slicing out exclusive cuts and rare drams for 10-plus years to Georgetown denizens and travelers who favor supreme hospitality. The perks, for the most part, are hush-hush. Being a member ensures a table for up to four guests within an hour’s notice. Beyond that, things get personal—the team has taken steps to ensure that benefits are tailored to the cardholders themselves. “We discovered that a longtime guest doesn’t enjoy Champagne,” notes Gilbert. “Now we make sure to start the meal with a complimentary cocktail for him and his wife.
